Banana Bread, As Promised

Okay, so I told my dear friend, Leanne, that I would blog about my banana bread making experience that occurred a few days before the first EMYC weekend.

Let me start by saying that I have never been a professional in the kitchen; far from it, actually.
I am terrible at controlling more than one thing on the stove, I stress out when I have to put something into, or take something out of, the oven (It's hot in there, give me a break!), I wear oven mitts CONSTANTLY for fear of burning myself, I can't EVER double or quadruple recipes properly (there have been incidents where too much salt has been added to what were supposed to be sweet treats), and I usually forget to put the timer on once I've started baking something.

Well, while I was in the process of making the banana bread for the first EMYC weekend, the inevitable happened. Yes, you guessed it, I messed up the dough.

My mom had given me explicit instructions on which recipe to use, which bowls and spoons and measuring utensils to use, but of course, she didn't say anything about the bananas. So, I decided to just follow the recipe (which I obviously did not follow very well). As I was mixing together my ingredients, I quickly looked over the recipe book to see when to put in the bananas, and it said that they were to be put in next. Well, I guess I missed the part where it said two cups of MASHED BANANAS, and NOT WHOLE BANANAS. I just grabbed those suckers, peeled them, and chucked them straight into the batter. As I began to mix it with a large wooden spoon, I noticed that it was rather lumpy. This did NOT look the same as batter from the last time I made banana bread. So, I hesitantly looked back (more closely this time) at the recipe, and realized that I hadn't mashed the bananas like it asked. Wow, what a revelation.
Well, then I panicked (because that's what I do when things don't work properly) because I didn't have enough bananas to make a new batter, and I didn't want to just throw this one away. So, with my brilliant and imaginative brain, I figured that it would be a good idea to use a potato masher to make the batter less... chunky. And it worked!

And then I brought the banana bread to Eastman, and then everyone lived happily ever after!
